Jianshui's small tofu squares cook on a shared charcoal grill, usually tended by one person who keeps turning them while strangers share the table. Every piece you take earns a corn kernel in your dish, and the kernels are counted at the end for the bill. Go for the soft, puffy tofu that bursts when you bite it, and add grilled grass sprouts and lotus root.
What locals sayTravelers call the corn-kernel tally the most fun meal in town, and rate the plump, soft tofu far above the small dry cubes some stalls sell by the piece.
