Grass sprouts are the crisp white shoots of a water plant grown around Jianshui. They come in a light pork broth with rice noodles or rolled rice sheets, and this is the breakfast that starts the classic walk across town. The one to try is the first shop on the left once you're through the gate. At some shops, extra noodles are free and only the meat is a fixed portion.
