Daban Well: ¥5 soy milk at the spring behind Jianshui's tofu
Just outside the West Gate, Jianshui
Daban Well, also called Pubo Spring, is the old public well that locals credit for the town's tofu, and small tofu workshops fill the lanes around it. Skip the busiest grill-it-yourself shop at the well and sit down at one of the soy shops beside it for fresh soy milk or tofu pudding. Come in the morning, when the workshops are pressing the day's tofu.
What locals sayMany say the best-known tofu shop at the well is crowded and not especially good, but the well itself and a cheap bowl of soy milk are worth the stop.
