Xizhou baba straight off the charcoal: savory or sweet

Xizhou, about 20 km north of Dali Old Town

Xizhou's flatbread is baked with charcoal heat from above and below until the layers turn crisp. The savory one has pork and scallion; the sweet one is filled with sugar or rose paste. Buy from a stall where you can see it coming off the griddle and eat it hot.
