Slices of erkuai, a firm rice cake, stir-fried with ham, greens and tomato. The name means 'came to the emperor's rescue', from a legend about a fleeing Ming emperor fed here. Order it alongside a clay-pot hotpot (tuguozi) for a classic Tengchong meal.
