Junhai Senlin has served wild mushroom hotpot for about 20 years: a chicken broth with platters of seasonal porcini, termite mushrooms (jizong) and other wild varieties. On the side, order fried rice with ganba, a dark, deeply savory local mushroom. The season runs roughly June to September.
