Sa pie, the Dai dipping dish: start with the lemon version
Dai restaurants, Mangshi and Ruili
Rice noodles, grilled beef or pork and herbs dipped into a sharp, sour sauce. The traditional bitter version gets its taste from cattle bile or intestinal juices, which many first-timers find too strong; the lemon version is fresher and easier to like.
What locals sayReviews split: the lemon one converts people, while the bitter one is an acquired taste even for diners from elsewhere in China.
