Heijing cooks with its own salt, and its signature dish is a whole chicken sealed and cooked in hot local salt. Huiyoutang is the restaurant most visitors name first. Add ash tofu, cubes cured in pine-needle ash and cooked until the skin is lightly crisp and the inside soft; it tastes far milder than it sounds.
